Sweet Potato Bisque

3 lbs of chopped sweet potatounnamed

1 large white onion chopped

1 shallot chopped

2 cloves of garlic chopped

48 oz of low sodium 99% fat free chicken stock (any stock works, I like the taste of the chicken stock, veggie would work or even water too)

Salt, pepper, cayenne, paprika all to taste (probably about ¼-½ teaspoon of each.

Throw all ingredients into a crock pot set on high for 5 hours (this should be enough time so that the potatoes are soft/edible, easily break apart when pierced with a fork)

About halfway through the cook time I stirred a bit – but I don’t think it’s necessary.


Then I used an immersion blender and blended directly in the crock pot till smooth.


Serve immediately or wait, let stay on warm if you’d like.

I garnished with a dollop of plain FF Greek yogurt, shredded cheese and bacon bits.


1 cup per serving – this made about 12 servings – without the garnish, the soup is 108 calories, 0 fat, 25 carbs, 2 protein
