Last week, one of the participants in our Nutrition Jumpstart asked a great question. They were tired of eating the same things, “Do you have any suggestions for good veggie recipes?”
Two simple, protein packed meals with veggie variety came to mind.
- Chicken, egg, or tuna salad. Chop up vegetables like celery, onions, and peppers (add spicy peppers like jalapenos for a kick!). Add your veggies to a bowl with your protein of choice, and mayonnaise to bind it all together. I like to eat this with plantain chips. Season your salad with things like salt, pepper, crushed red pepper, and everything bagel seasoning. Other protein options like turkey, canned salmon, or shrimp work well too. Add fruit, like grapes or apples, and nuts, like almonds or walnuts, for even more variety!
- Stir fry. Use any protein (chicken, steak, pork, seafood, etc.) with veggies like peppers, onions, mushrooms, and cook it all up in one pan. I like to cook it in olive oil or grass-fed butter. You can use a wide variety of vegetables and seasonings in a stir fry. Fruit, like pineapple, and nuts, like cashews, work well here too.
Both of these meals are easily prepared, and infinitely variable. Add the ingredients to your grocery list, and give them a try this week!
